I thought we were getting a real education when we went grocery shopping in The Valley, but "Valley Meats" were the real surprise.

Back in Kansas, many meat markets have pickled pigs feet, but here in The Valley, we found frozen
beef feet . . .

and fresh
chicken feet . . .

and fresh
pork belly skins . . .

and packages of fresh
tripe . . .
(oh, my gosh)

and frozen whole
hog's heads. At least they're shaved and have the eyeballs removed! I wonder if they pulled their teeth too. But, I guess at 40 cents a pound it could be a cheap meal.
. . . but I think I'll just stick with pork chops and t-bones
!
